L’élite anglo-saxonne, vaincue, disparut au profit d’une autre, venue du continent. Les conquérants apportèrent leur langue et leur culture. Ainsi dans l’art culinaire on peut noter l’utilisation de mots franco-normands. Ainsi à l’époque, les rustres fermiers saxons élevaient et mangeaient de la « cow » quand l’aristocratie normande mangeait du bœuf. C’est pourquoi nous mangeons maintenant du « beef » de l’autre côté du Channel.

Even though he built royal residences in England, William always remain faithfull to his "good" city of Caen, were he built the "Abbaye aux Hommes" (for men) and his wife, Matilda the "Abbaye aux Dames" (for women).
